Sumatra, one of Indonesia’s largest islands, is famous for producing distinctive and complex coffees that stand out in the global market. Coffee from Sumatra is typically grown in the highlands of the island, where the island’s volcanic soil and tropical climate provide ideal conditions for coffee cultivation. Sumatran coffee is known for its full body, low acidity, and earthy, herbal flavors, often with notes of chocolate, tobacco, and spice, making it a favorite for blends and dark roasts. This unique flavor profile is partly due to the traditional “wet-hulling” process (known as giling basah), where the coffee beans are hulled while still wet, leading to their characteristic deep, rich taste and slightly rough appearance.
